I use pdfs a lot at work and deal with other's files. I really wish people knew they can't use whatever font they please and expect it to work the same on another computer (not really their fault, I know). It's unfortunate most people don't know how to make their own pdfs at home, or there are barriers to making them (a layman trying to figure out/find "print as" pdf versus "save as"... or financial barriers).
The Adobe suite of programs is pretty consistent in making pdfs that work well, but other (well-used) programs can often be a nightmare. As a result, I usually end up telling people about OpenOffice and Gimp :)
The only thing that bugs me on my (Linux) system is that I'm a power user, so I miss some of the fancier PDF manipulation... even just extract and combine. From what I understand, you can manipulate PDFs with ImageMagick, but I haven't gotten around to it yet!

In the Ubuntu family it's even easier: just print to the included PDF pseudo-printer. It even gives you a way to filter out unwanted pages.
Look in $HOME/PDF for the output.
